Celebrate fall with a Swedish apple cake!

It’s fall and apple season!

Honey Crisp apples are Jessica’s favorite to eat and cook because they’re both sweet and tart. So, she incorporated them in this delicious Swedish apple cake recipe.


“It is apples in a cake batter and then you bake it,” she explained. “I think it probably smells heavenly.”

Jessica recommends slicing the apples instead of chopping them into big chunks. This allows the apple to cook thoroughly.

Swedish Apple Cake

Ingredients:

3 honey crisp apples

Lemon 

1 cup of butter

1 cup sugar

3 eggs (room temperature)

1 1/2 teaspoon vanilla extract

2 cups flour

2 tsp baking powder

1 teaspoon nutmeg

1/2 teaspoon ground cardamom

1 tbsp cinnamon

Instructions:

  1. Peel apples and cut into uniform slices not too thick.
  2. Add apple slices to bowl and squeeze lemon over to keep them from browning.
  3. In a stand mixer, add room temperature butter and sugar and mix
  4. Add 3 eggs, one at a time and the vanilla extract.
  5. Add dry ingredients into a bowl – flour, baking powder, salt, nutmeg, cardamom, cinnamon and mix.
  6. Add the dry ingredients into the wet ingredients and mix.
  7. Add most of apples slices to the batter.  Leave some slices to create a design at the bottom of a pie dish.
  8. Add parchment at bottom of pie dish and spread butter all over dish to prevent cake from sticking.
  9. Sprinkle cinnamon sugar on bottom of pie dish.
  10. Arrange leftover apple slices in a pretty design on bottom of pie dish.
  11. Add batter to pie dish. Press it gently to make it flat.
  12. Add cake to 350 degree preheated oven and bake for 45 mins or until cake is baked all the way through.
  13. Make sure cake cools when you take out of oven.
  14. Once the cake has cooled, you can flip it over onto a cake stand, sprinkle with powder sugar.
  15. Serve with scoop of ice cream.
